How to make a mirror glaze!



Glazing is one of the most important finishing step to get a stunning cake to impress your guest !! 

 

Here is an easy recipe to make the perfect mirror glaze.

 
 

List of ingredients for the perfect mirror coloured glaze :

- 50g water 

- 3g of your favourite concentrated flavour (here we used raspberry) or colouring 

- 100g caster sugar 

- 100g glucose syrup

- 67g unsweetened concentrated milk

- ¼ vanilla bean 

- 3 gelatin sheets 

Boil the water, sugar, concentrated flavor (or dye) and glucose together. Pour over the concentrated milk. Add the gelatin, and the vanilla.

Mix and refrigerate for at least 6 hours. 

 

Tips from the Chef : 

If you want to use it the next day you can do it at a temperature of 25°C to 30°C. 

To do this, you have to warm it in the bath up to 40°C and let the temperature drop to 30°C
